Dirty services, bad food, and terrible attention.
I went to dinner with my family; after having a reservation, we entered half an hour late and then waited an hour with only drinks.
The morteruelo was very bad, the lamb chops were 15 euros for 5 smelly bones, the tenderloin was sour and dry, and my children had to eat dinner when we got home.
When I search this page for places to eat, they usually do not disappoint, so I do not understand how there are such good reviews for a truly bad place.
The only good thing is the views; the service was bad, and when I complained on-site, they did not even consider an apology.
We were forgotten, poorly attended, and ended up paying 100 euros to go home for dinner.
The bathrooms were disgusting.

The location is excellent for exploring the old town, with restaurants, bars, viewpoints, and many of the main attractions all within easy walking distance. One of the highlights of our stay was having a room with a balcony overlooking the valley, bridge, and Parador, which gave the stay a really special atmosphere and fantastic views.
The room itself was fairly basic but clean, comfortable, and perfectly adequate for a one-night stopover. The bedding was comfortable and the hotel overall felt relaxed and authentic rather than overly modern. There were a few signs of wear and tear in places which will likely need attention over time, but nothing that negatively affected our stay.
Staff were friendly and welcoming throughout and check-in was simple and efficient. Like many historic hotels located in old town centres, access by car can feel a little tight and parking requires some planning, although this is part of staying somewhere with so much history and character rather than a criticism of the hotel itself.
Overall, we felt the hotel offered very good value for money and was an excellent base for exploring Cuenca. We would happily recommend it to anyone looking for a more traditional and atmospheric experience rather than a modern chain hotel.
Excellent location
